Understanding VACCP and TACCP - Target Audience

Working in the food production and food manufacturing industries requires knowledge of food safety management systems. TACCP and VACCP work hand-in-hand with the HACCP food safety system in order to identify and manage the risks to a food business’ products.

TACCP and VACCP are internationally recognised management systems designed to help food manufacturers perform food defence threat assessments and develop a food defence system. Implementing these systems helps to defend against food fraud and food crime, which are significant threats to both food businesses and consumers.

This VACCP and TACCP training online course will help learners understand food threats and how to combat them, making it suitable for food handlers and anyone supervising food manufacturing or food production.

Understanding VACCP and TACCP - Course Outline

Food businesses, including caterers, food manufacturers and food producers, must ensure they provide safe food for their customers. Doing so requires food businesses to protect themselves from intentional food threats, such as food fraud and food crimes, with a food defence system.

In addition to the moral obligation to provide safe food, failure to prevent or detect food threats can be harmful to businesses’ reputations and bottom lines.

This VACCP and TACCP training is designed to help learners understand food threats and how to combat them. After completing the course, learners will understand:

  • What TACCP and VACCP are.
  • Why a food defence system is important.
  • The main threats that can affect a food business.
  • The types of attacker that may target a food business and what motivates them.
  • How to create a food defence system.
  • The questions that an effective food defence system should answer.

Further Training

Alongside this training, we recommended that all learners take one of our Level 2 Food Safety courses for Catering, Retail or Manufacturing. These courses cover a range of information on food safety and hygiene, knowledge of which is required to implement a food defence management system. We also offer a Level 2 HACCP Training course, which covers the creation of a food safety management system.

It takes approximately 2 hours to complete the course. This can be spread out over multiple sessions or completed in a single session. There is no time limit for completion.

All candidates must complete a multiple choice assessment after working through the training material. The candidate will be asked 16 multiple choice questions and need to answer a minimum of 12 correctly to pass. Candidates will be given instant feedback after completing the assessment stating whether they have passed or failed. The assessment can be retaken as many times as is required to pass at no additional cost.
