HACCP Principles Course - Target Audience

When running a food business, it is essential that the food you produce is safe for people to consume. However, there are many food safety hazards that, if left uncontrolled, can cause serious harm to your consumers and business. It is for this reason that all food businesses must have an effective food safety management system in place that is based on the seven principles of HACCP.

Hazard Analysis and Critical Control Points (HACCP) is an internationally recognised management system designed to help food businesses to create and implement appropriate food safety measures. Its use is also a legal requirement enforced by food safety laws, including the Food Safety and Hygiene (England) Regulations 2013 and its equivalents.

This course will explain why HACCP is important and the role that staff play in a safety management system. It will also provide learners with the knowledge required to create and implement an effective HACCP plan. It is suitable for anyone working for a food business, such as food handlers, managers and supervisors.

HACCP Principles Training - Course Overview

Overview

Food businesses, including food manufacturers and caterers, have a moral and legal obligation to ensure that they produce safe food. Failure to do so can cause significant damage to a business's reputation and finances, and may result in legal action being taken against them.

Having an effective food safety management system in place is essential to prevent this from happening. It also demonstrates your business's commitment to producing food that is safe to consume.

After completing the course content, learners will understand:

  • What a HACCP plan is and the benefits of completing one.
  • How to correctly complete a HACCP study.
  • How to implement a HACCP plan once completed.

Further Training

Alongside this training, we recommended that all learners take one of our Level 2 Food Safety for Catering, Level 2 Food Safety for Retail or Level 2 Food Safety for Manufacturing courses. These courses cover a range of information on food safety and hygiene, knowledge of which is required to implement a HACCP system. We also offer a Level 2 TACCP and VACCP Training course, which covers the creation of a food defence management system.

Duration

It takes approximately 2 hours to complete the course in full. This can be spread out over multiple sessions or completed in a single session. There is no time limit for completion.

Assessment

All candidates must complete a multiple choice assessment after working through the training material. The candidate will be asked 16 multiple choice questions and need to answer a minimum of 12 correctly to pass. Candidates will be given instant feedback after completing the assessment stating whether they have passed or failed. The assessment can be retaken as many times as is required to pass at no additional cost.

Module Summary

  • The history of HACCP.
  • Why food businesses must have a food safety management system in place.
  • Alternative food safety management systems, including Safer Food, Better Business and CookSafe.

In this module, learners will cover:

  • Biological, chemical and physical contaminants.
  • Allergens and how they can make food unsafe.
  • The symptoms and causes of food poisoning.
  • Bacterial reproduction.

This module explores:

  • What preparatory stages are and why they are important.
  • How to complete each of these preparatory stages.

Learners will explore:

  • What the 7 principles of HACCP are.
  • How to complete each of the principles.
  • The application of a HACCP program.

In this module, we will cover:

  • How to verify that a food safety management system is effective.
  • The training required to ensure a HACCP plan is implemented correctly.
  • Maintaining a HACCP plan.

HACCP Principles Training - Accreditation and Certification

Institute of Hospitality Certificate

Successful candidates will receive a Institute of Hospitality Certificate and 2 CPD Credits.

This certificate is accepted by local authorities as proof of training.

There is no expiry date on the certificate as there is no formally recognised requirement for re-training, but we recommend that some form of re-training is completed every 3 yearsMore information on refresher training can be found here.
