Food Allergy Awareness - Accreditation and Certification

Institute of Hospitality Certificate

Successful candidates will receive a Institute of Hospitality Certificate and 1 CPD Credit.

This certificate is accepted by local authorities as proof of training.

There is no expiry date on the certificate as there is no formally recognised requirement for re-training. More information on how often should you do food safety training and renew food hygiene certificates.

Food Allergy Awareness - Course Overview

Overview

All food businesses must have a food safety management system in place to make sure the food they produce is safe. This system is also required to comply with food safety legislation such as the Food Safety Act 1990.

An effective food safety management system must contain information on allergens and detail the measures required to control allergenic cross-contamination. It must also detail the measures required to protect its customers from experiencing allergic reactions. This is important to avoid any potential legal, financial and moral repercussions.

After completing this allergen training course, learners will understand:

  • The different forms of food hypersensitivity are, along with their symptoms and causes.
  • The 14 main allergens are and how they are used in food.
  • Food information legislation and how allergen information must be provided for prepacked and non-prepacked foods.
  • Precautionary allergen labelling and when it is used.
  • How allergenic cross-contamination occurs.
  • The measures that must be taken while preparing and storing food to minimise allergenic cross-contamination.

Further Training

For further food safety training, consider our Level 2 Food Safety for Catering or Level 2 Food Safety for Retail courses. Both of these courses cover the information required to maintain good food hygiene and safety practices at work. We also offer a HACCP Principles training course, designed to help businesses create an effective food safety management system.

Duration

It takes approximately 1 hour to complete the course in full. This can be spread out over multiple sessions or completed in a single session. There is no time limit for completion.

Assessment

All candidates must complete a multiple choice assessment after working through the training material. The candidate will be asked 12 multiple choice questions and need to answer a minimum of 9 correctly to pass. Candidates will be given instant feedback after completing the assessment stating whether they have passed or failed. The assessment can be retaken as many times as is required to pass at no additional cost.

Module Summary

In this module, learners will explore:

  • Food allergy symptoms.
  • Information on food intolerance and hypersensitivity.
  • Signs of coeliac disease.
  • Immunoglobulin E (IgE) antibodies and other causes of allergic reactions.
  • Anaphylaxis and when to use an adrenaline auto-injector.
  • The 14 allergens, including sesame seeds and cereals containing gluten, and how they can be 'hidden' in food.

This module covers:

  • Food information legislation.
  • Information requirements for prepacked, non-prepacked and prepacked for direct sale foods.
  • How allergen information must be provided when selling online or by phone.
  • 'Gluten-free' and voluntary allergen labelling.

In this module, learners will cover:

  • How allergenic cross-contamination occurs.
  • Creating an allergen management policy.
  • How to avoid the cross-contamination of allergens when preparing food.
  • Correctly storing allergens.
